Banana Pikelets – No Sugar/Dairy

For your healthcare going no refined/artificial sugars plus no dairy doesn’t mean you can’t enjoy a delicious sweet

Use Organic for Health when possible

 

2 medium-large Ripe Bananas

½ teaspoon cinnamon

½ cup Wholemeal Spelt Flour – 1 tablespoon more if needed

1 Organic Egg

Organic Virgin Coconut Oil for cooking

 

On the pikelets is Organic Mixed Berries, and non-dairy Coconut Yoghurt – We used the brand Nakula Organic Natural unsweetened Coconut Yoghurt bought from the Australian Woolworths food chain

 

  1. Mash well 2 bananas in a bowl with a fork
  2. Beat the egg well in a separate bowl – mix them sideways in the bowl using a whisk
  3. Add the egg to the bananas, mixing well
  4. Add in wholemeal /spelt flour, ½ cup then add 1 tablespoon more only if needed, add cinnamon in, and mix well
  5. Add 1 Tablespoon of water only if required – optional
  6. Heat the frypan with a little oil – use organic virgin coconut oil. Add the mixture approximately 1 tablespoon for each, cook each side until browned

 

Top with Berries, non-dairy yoghurt or Coconut Cream. Enjoy

Joanne’s Tip – Coconut cream can be used instead of yogurt, we use a cold organic coconut cream can from the fridge , either use it as a stirred liquid on the pancakes or whip it with an electric beater. Only use the hardened coconut for whipping, leaving the liquid.

Add 1 teaspoon of honey to the cream as you whip. Some coconut cream from a can makes whipped coconut other times it doesn’t, but it still tastes divine. See more of my recipes
