Date Cookies


It is so great to make delicious recipes the whole family enjoys. Better nutrition for everyone’s health with
no processed sugar, no dairy, no meat, no manufactured sauces. Use organic food where possible, your body will thank you.

Energy Light

  • 1 Cup of diced small Pitted Dates – use scissors to dice the dates, approximately 5-6 cuts of each date. The more they are diced the sweeter the cookies so it’s worth the extra time
  • 1 Cup of Organic Wholemeal Spelt Flour/plain or stone-ground wholemeal
  • 60 mls or ¼ of a cup of Melted Organic Virgin Coconut Oil
  • 1 Organic Egg
  • 60 mls of Organic Oats or Rice Milk – shake the carton before use

Preheat the oven to 180 degrees –

  1. Cut the dates small. Mix all the ingredients including the dates, altogether in a bowl, mix well – I use a fork and scrape down sides of the bowl with a spatula.
  2. Use some extra coconut oil to grease a flat baking tray. Using a heaped teaspoon put the mixture individually onto the greased tray – about 1-1.5 cm in height thickness  use a fork to lightly press them into a biscuit shape
  3. Makes approximately 10 – 12. Cook for 20-25 minutes or until browned
  4. Leave them to cool for a few minutes on the tray. Then transfer them onto a cooling rack. Enjoy them warm or at room temperature.

Joanne’s Tip – Use Organic whenever possible – Dates and coconut oil are bursting with nutrients for energy and vitality. Cutting the dates small takes an extra few minutes but it’s worthwhile for a sweeter mix.

Melt the coconut oil to a liquid if it is solid – see below how to melt it for healthcare.

For healthcare, no microwave is used as it depletes the nutrition of foods. It is vital we receive all the beneficial nutrients.

To melt the oil, use a bowl that is quarter filled with hot water and place a cup with the measured amount of solid coconut oil into it – solid coconut oil when it is melted is around the same measurement, depends on the brand.

Stir it frequently until it becomes a liquid. It happens fairly quickly. Enjoy the cookies with a healing warm organic herbal tea.

When you decide to withdraw from processed/artificial sugar  it is advised not to have anything else with processed sugars as you will not get the true taste of natural sugar recipes that we have created
