no processed sugar, no dairy, no meat, no manufactured sauces. Use organic food where possible, your body will thank you.
Apple Cinnamon Muffins – No sugar/Dairy

Energy Light

  • 1 Free Range or Organic Egg
  • 1/4 cup or 45 grams diced pitted Medjool dates each 10 times
  • 200 grams grated red or green Apples
  • ½ a Cup Melted or Softened Organic Virgin Coconut Oil
  • 1 Cup  or 160 grams Wholemeal Spelt Flour or any Wholemeal Plain Flour
  • ½ Teaspoon Bicarbonate of soda
  • 1-2 Teaspoons Ground Cinnamon – depends on preferred taste
  • 1 Tablespoon Apple Cider Vinegar

Use Organic whenever possible for healthcare

Pre-heat the oven to 180 degrees (Australian)

  1. Peel if not organic, and grate the apples directly into the mixing bowl you are using to make the muffins – that will get all the apple juice for the sweetness
  2. Mix in all the dry ingredients except the bicarbonate soda with the grated apple
  3.  In a cup mix bicarbonate soda and apple cider vinegar – goes fizzy. Then add to the dry ingredients
  4. Add the dates, egg, and organic virgin coconut oil in the bowl and mix well
  5. Spoon into a muffin cups or paper cups greased with virgin coconut oil
  6. Bake at 180 degrees for approximately 30-35 minutes approximately or until browned. Makes approximately 9-10
  7. Leave to cool for 10 minutes or more. Place on a cooling tray and then enjoy it with a cup of organic herbal brewed tea 🙂

Joanne’s Tip – We use Spelt flour often (cousin to wheat flours) as it makes the baking lighter, is sweeter and a nutty flavour. Use organic for healthcare when possible.

These beautiful apple muffins are sometimes moist the next day as it depends on how juicy the apples are 🙂 and can still can be eaten. Can also be eaten with a few dollops of non-dairy yogurt and mix in  1/2 teaspoon of organic honey for breakfast or dessert.

Microwaves are not used for my awareness as they deplete food nutrition, for healthcare it is vital we receive all the beneficial nutrients.

When you decide to withdraw from processed/artificial sugar  it is advised not to have anything else with processed sugars as you will not get the true taste of natural sugar recipes that we have created
