Banana Slice – No dairy or sugar

It is so great to make delicious recipes the whole family enjoys. Better nutrition for everyone’s health with
no processed sugar, no dairy, no meat, no manufactured sauces. Use organic food where possible, your body will thank you.

- 170grams or 2 ripe Bananas – Ripeness level determines sweetness, the riper the better
- ½ Cup Organic Desiccated Coconut
- 60grams thinly diced Medjool Pitted Dates – the smaller they are diced the sweeter it becomes, we did them 6-7 times each or more
- 1/3 cup virgin Coconut Oil Melted –for health no microwave is used–

- 1 Cup Wholemeal Spelt Flour
- 1 Teaspoon Bicarbonate Soda (baking soda)- Check there are no lumps
- 1/2 Cup Oats or Almond Milk
- 1 Organic Egg
- 1 Tablespoon Apple Cider Vinegar
- 1 loaf baking dish
- Pre-heat Oven to 180c degrees, In a container add diced dates into the plant milk, stir and set aside for 10-15 minutes
- Prepare the rest of ingredients
- Mash the bananas well, (until nearly a paste), in to a mixing bowl and then add the flour and desiccated coconut
- In a separate cup; add the bicarb soda then add the apple cider vinegar – it will fizz, lightly stir then pour it over the flour in the mixing bowl. To bowl add coconut oil, egg, and plant milk with dates, stir well
- Mix well and grease a small/medium loaf tin with coconut oil
- Pour in the mixture into the loaf tin and put in oven for approx. 50 mins or until browned. All ovens are different but when ready it develops a few deep cracks on top
- Cool in the loaf tin for 15 minutes then put the Banana Slice onto cooling rack. Slice & Enjoy.

Joanne’s Tips – We use Spelt flour (cousin to wheat flours) as it makes the baking lighter, is sweeter and has a nutty flavour. We haven’t tried it yet but try buckwheat flour. We know it’s good to use for something different

To Melt the solid coconut oil place it in a cup then in a bowl of a little warm/hot water. Stir it and it will melt quickly. Then measure it again. Enjoy this slice with Strawberry Banana Smoothie
Microwaves are not used for my awareness as they deplete all food nutrition and for health it is vital we receive all the beneficial nutrients.
Use Organic for health when ever possible 🙂
When you decide to withdraw from processed/artificial sugar it is advised not to have anything else with processed sugars as you will not get the true taste of natural sugar recipes that we have created
