Cacao & Sultana Mini Cakes – No Sugar/Dairy

no processed sugar, no dairy, no meat, no manufactured sauces. Use organic food where possible, your body will thank you.
Cacao & Sultana Mini Cakes – No Sugar/Dairy

Energy Light

  • 1 Teaspoon Organic Cacao Powder – not cocoa
  • 1 cup Sultanas
  • 130 grams ripe Banana
  • 1 Organic egg
  • 1/2 Cup Organic Oats or Almond Milk (shake the carton before use)
  • 2 tablespoons Coconut Flour
  • 1 & 1/4 Cups Wholemeal Spelt Flour or plain Wholemeal
  • 1 level Teaspoon of Bi-carbonate of Soda (baking soda)- check for no lumps
  • 1 Tablespoon Apple Cider Vinegar

Use organic whenever possible for health 🙂

  1.  Pre-Heat the oven to 180c or 360f
  2.  Place the sultanas in a small jug, pour hot water over them, until they are covered. Cover them for approximately 10-15 minutes while preparing the ingredients. Tip out the water when finished, the sultanas will look plumper. Mash bananas like a paste
  3.  Grease the muffin tray with organic virgin coconut oil or use muffin environmental paper cups
  4.  Add bi-carb and apple cider vinegar to a cup, stir and see it fizz. Add flours and cacao powder into a medium bowl, then add the bi-carb fizz to the bowl. Stir
  5.  Add the sultanas with no water, bananas, egg, plant milk and  and mix them well altogether with the dry ingredients. As an idea using a fork to stir does well
  6.  Stir again each time when putting the mixture into each cup, only if required. Bake for approximately 25 minutes until golden brown -depends on your oven temperature
  7.  Cool the mini cakes in the tray  then using a knife, slice carefully around each muffin to take them out if needed.  Transfer them onto a cooling rack for awhile, or enjoy them warm

 

Makes 8-10 mini cakes.  Enjoy them with a healing herbal tea  🙂

 

Joanne’s Tip– Spelt flour is the best as it is sweeter and nuttier also organic sultanas are more sweeter as well.

Enjoy them with a healing warm organic herbal tea.  Or place some chocolate/banana mousse on top of the mini cakes for extra taste or delicious with Banana Ice Cream
